baked eggs with chilli tapenade
fry garlic and fresh thyme in a pan with olive oil. add one tin of tomatoes, one tin of lentils, 1 tablespoon of chilli tapenade and season well. simmer for 5-10 minutes then transfer to a couple of small oven-proof dishes...crack an egg on top and put in the oven on grill until cooked. Sprinkle on cheese to melt for another couple of minutes. serve with fresh thyme, rocket and smoked paprika!
